- Discharge Platform Upon arrival of fresh tomatoes, often
transported by large trucks, manual unloading can be laborious. To
address this, we have devised a discharge platform equipped with
water guns for unloading tomatoes efficiently from trucks and
conveying them to the processing line. Additionally, the platform
serves the purpose of pre-washing the fresh tomatoes before
processing begins.
- Elevator / Conveyor The elevator/conveyor system is instrumental in
transferring fresh tomatoes from the exterior of the building to
the processing area indoors.
- Washing Prior to crushing, a thorough washing of fresh tomatoes is
essential. We employ a combination of bubble washing and spray
washing machines for this task. If stringent cleaning standards are
required, additional washing stages can be incorporated.
Furthermore, ultrasonic and ozone cleaning techniques can be
integrated for enhanced cleaning efficacy.
- Sorting Following the washing process, visually inspecting each
tomato allows us to identify and remove any defective ones
manually.
- Crushing The crusher operates at a speed of 1470 r/min to ensure
complete crushing of fresh tomatoes.
- Preheating The pre-heater is utilized to raise the temperature of
the product post-crushing, typically adjustable between 45°C to
85°C. This step enhances juice extraction rates for subsequent
processes, while also safeguarding the color and flavor of the
final tomato paste.
- Pulper and Refiner Running at 1470 r/min, the pulper and refiner
machines employ centrifugal force to pass the product through
screens, refining it. Typically, a double stage pulper and refiner
setup is used, with varying screen sizes for each stage to achieve
desired refinement levels.
- Evaporation Employing a Forced Circulation Vacuum Evaporator,
tomato paste is concentrated under vacuum and low temperatures to
preserve taste and nutrients. The resulting tomato paste usually
ranges in brix levels of 28-30 and 36-38.
- Sterilization Tube-in-tube type sterilizers are employed for
sterilizing the tomato paste. The sterilization temperature and
holding time can be adjusted, typically heating the paste to around
115°C for 30 seconds before rapid cooling to ambient temperature to
preserve taste and nutrients.
- Aseptic Filling The aseptic filling machine operates in conjunction
with the sterilizer in a closed cycle system. Before production,
the entire cycle undergoes sterilization to maintain an aseptic
environment. Steam is utilized to safeguard the filling cavity,
ensuring an aseptic filling environment.
- Storage or Blending The processed tomato paste is either stored for
further use or directed towards blending processes as required.
