Process flow of automatic tomato paste filling production line:

Tomato fruit selection → tomato cleaning and sorting → tomato crushing → tomato pressing → tomato paste concentration and evaporation → sterilization → tomato paste filling → labeling → code spraying → packing.

Selection and grading: generally, the fruits with green shoulder, stain, fruit cracking, damage, navel rot and insufficient maturity are selected manually. Grading and selection can be carried out at the same time.

Washing: the purpose is to remove the sediment, impurities and pesticide residues on the fruit. In the production, it is usually first soaked and cleaned, and the cleaning system is washed by reverse flow. The tomato is cleaned for at least 4 times. Chemical cleaning, soaking cleaning and spray cleaning are also adopted.

Soaking: soak the washed tomato in hot water at 55-56 ℃ for 3 min to remove the larvae or eggs on the fruit surface

Finishing: remove the green part of the fruit base with a knife, then peel and remove the heart, or remove the seeds according to the needs, so as to reach the quality standard of beating.

Beating: beating with a beating machine or rotary separator, the seeds and other residues are left in the beating machine, and the pulp and juice flow out through the filter screen. It is required that the pulp should be fine and uniform without other impurities. The best beating method is the three pass beater. The diameter of the first pass screen is 1.0-1.2mm, the second pass screen is 0.7-0.9mm, and the third pass screen is 0.5-0.8mm.

Ingredients of ketchup: in ketchup, the main ingredients are tomatoes, and the auxiliary materials include sugar, salt, vinegar, onion, garlic and other spices.

Cooking: after mixing the ingredients according to the formula, the cooking time shall not exceed 45min, but it shall not be less than 30min. Otherwise, it is difficult to extract the flavor of the fragrance.

Can and seal: ketchup can be packed in various specifications of bottles, but bottles must be cleaned and sterilized before use. In order to avoid air entering and ensure the vacuum degree in the bottle, it is usually used to fill the bottle (the temperature is above 85 ℃) after cooking, and then vacuum seal immediately.

Sterilization and cooling: sterilize in 100 ℃ boiling water for 18-20 minutes. Cool it quickly after sterilization, so as to reduce the product temperature to normal temperature, so as to avoid the color of sauce body from being too heated, and lycopene will be oxidized by heating.

Finished product: the finished product is finished product after quality inspection meets the product quality requirements.
