physiological functions, making it a preservative and colorant in
meat products. Furthermore, the acidity of lycopene-rich tomato
products lowers the pH of meat, inhibiting the growth of spoilage
microorganisms to a certain extent. Therefore, it can be used as a
preservative and freshness-preserving agent in meat products,
partially replacing nitrites.
