Glucoraphanin is primarily found in cruciferous vegetables such as radish, broccoli, kale, and radish seeds.
The degradation products of glucoraphanin are primarily sulforaphane, sulforaphane nitrile, goitrin, and 3-methylsulfoxyisothiocyanate (Iberin), with sulforaphane being the most abundant.
Sulforaphane has strong anticancer activity and is a multifunctional inducer that can induce the production of type II detoxification enzymes—glutathione transferase and quinone reductase—which confer resistance to many carcinogens, thereby exerting anticancer effects.
