Description of the Die Cast Stand Mixer EF733
How is the dough's gluten formed by using of die cast kitchen dough mixer? Wheat has two proteins, Gliadin and Glutenin. When they are activated by water, they link together and form a “strength chain”. This tendon chain has the same malleability and contraction as rubber bands. When yeasts produce carbon dioxide gas during fermentation and baking, the tendons chain can stretch (stretch) while enveloping the gas (contractility), causing the bread to become bulky, fluffy and flexible.
