A cold store essentially consists of a number of refrigerated chambers which are able to chill, freeze and store any perishable product.

Cold room / Cold storage for fruits and vegetables need to be maintained in specific temperature and humidity. In addition to proper temperature and humidity, fruits and vegebles should be always stored separately. Some fruits do not ripen once harvested while others will continue to ripen after harvest because they naturally produce ethylene, which speeds the ripening process of vegetables. Fruits are also very susceptible to picking up the taste of nearby vegetables

Some vegetables such as potatoes, onions, squash and rutabagas can be stored for several months if certain criteria are met. And temperature range of cold room for Fruits can vary between -40℃ to + 20 ℃.
